I think I can say that I am one of the few winemakers who really have a complete view of the whole winemaking process, starting from the production of the raw material. I consider this particularly important because I believe that the quality of wine is not shaped in the cellar but on the hillside. The winemaker only helps the grape to become what it is. Like a woman, natural beauty is a gift that can only be born with, not acquired. It is the winemaker's job to show this beauty, but he must be careful with the make-up: sooner or later the mask will come off and reality will unfold. The technological background is just a toolbox in the hands of the winemaker, which nowadays can let us create almost anything, but it is up to his conscience which tools he uses. If the grapes are perfect, there is no need for magic tricks. Only knowledge, attention and patience is needed. In fact, this is what I think of winemaking. And the wines I've made so far seem to confirm that I'm right.
